Moroccan Mint Tea

Ingredients: 

2 tablespoons green tea
5 cups boiling water
1 bunch fresh mint
1/2-1 cup sugar, to taste

Directions:

Place tea in teapot.

Pour in boiling water.

Cover and steep 2 to 3 minutes.

Wash mint under running water and add to pot.

Steep for 3 to 5 minutes.

Add sugar as desired.

Serve in mint tea glasses or small cups. 

South African Curried Eggs

Ingredients: 

2 tablespoons butter
2 onions, finely chopped
2 1/2 teaspoons hot curry powder
2 tablespoons cake flour
1 teaspoon salt
fresh ground black pepper
1 tablespoon sugar
1 tablespoon apple cider vinegar
1 1/2 cups water
6 hard-boiled eggs, shelled and halved

Directions:

Heat butter in a saucepan and saute onions gently until just browned.

Remove from heat. In a small bowl, mix curry powder, flour, salt, pepper and sugar into the vinegar. Incorporate curry mixture into onions and stir, slowly adding the water.

Simmer continuously for 10-15 minutes.

Taste for seasoning and adjust accordingly. Arrange halved eggs on a warm dish, and spoon on the curry sauce.

Ingredients: 

1 tablespoon vegetable oil
2 onions, sliced
3 garlic cloves, crushed
1 teaspoon curry powder
2 Tomatoes, sliced
1 teaspoon tomato puree
1 tablespoon fresh coriander, chopped
1 lb fish, filleted
1 tablespoon lemon juice
1 teaspoon salt
1/2 cup water

Directions:

Fry onions in vegetable oil until brown.

Add garlic and curry powder.

Stirring vigorously, cook for 1 minute on medium heat.

Add tomatoes, tomato puree, fresh coriander; cook for another minute.

Add fish, lemon juice, salt, and water.

Cover and cook on low heat for 15-20 minutes.

Serve hot with rice. 

Ground Beef Curry (Kima Curry)

Ingredients: 

2 tablespoons oil
1 cup onion, sliced
1 lb lean ground beef
1/2 tablespoon curry powder
5 garlic cloves, crushed
1 tablespoon gingerroot, crushed
3 medium Tomatoes, sliced
1 tablespoon tomato paste
1/2 teaspoon ground cinnamon
1 tablespoon cilantro, chopped
1/2 cup water
salt

Directions:

In a skillet, heat oil over medium high heat. Saute onion and beef until browned. Drain fat.

Add in curry powder, garlic, ginger, and tomatoes and fry briefly.

Stir in the rest of the ingredients. Turn down heat to medium and cook for 20 minutes to blend the flavors.

Serve over rice or with Chapatis.
